Preparation

  1. To start with the vegan chocolate sponge cake recipe, add the water, vinegar, oil, vanilla essence and erythritol (sweetener) in a large container. Mix everything well with some pastry rods until the sweetener is well dissolved or almost completely. This mixture is reserved.
  2. Then, in another container, add the whole wheat flour, cocoa powder, salt and bicarbonate. Everything is mixed together so that this mixture is well distributed.
  3. We put to preheat the oven with heat from above and below to 180ºC. Next, the dry ingredients are added little by little to the mixture of liquid ingredients and mixed with the pastry rods. Finally, the mass of the vegan chocolate cake is added to a mold that will be previously greased with a few drops of oil or butter and floured with a tablespoon of flour, so it will not stick and it will be easier to unmold it. You can also line it with greaseproof paper and save the step of greasing and flouring it.
  4. We put the mold in the oven and bake at 180ºC, for 50 minutes or until we pierce the cake in the center and the knife comes out clean. Let it cool when it comes out of the oven and you can now enjoy this rich vegan chocolate cake.

  • Erythritol: 180 grams
  • Sodium bicarbonate: 30 gr
  • Whole wheat flour: 180 gr
  • Vanilla: 1 soup spoon
  • Olive Oil: 60 milliliters
  • Salt: 1 pinch
  • Pure cocoa powder: 30 grams
